Are you able to help me hide the "Whole Lamb Share" header on my form. I don't want to delete in case I decide to use it again in the future.

You can hide the products or fields in the form, but we do not have the option to hide the section header, description. For now, you will have to delete the header and then add it again when you need it.

I'm located in the USA. Am I able to get the payment type "cheque" on my form changed to "check"

The instructions, error messages etc in the form are displayed based on the language set in the form. We do not have the option to change this standard set up. I'll share your feedback with our team.
