🦆 How We Prepare Our Duck

To achieve beautifully crisp skin and rich, even colour, each duck undergoes a carefully controlled preparation process:

1. Quality Selection

We begin with carefully chosen whole ducks of consistent size and quality.

2. Deep Cleaning

Each duck is thoroughly cleaned to ensure hygiene and remove any remaining impurities.

3. Precision Hand Finishing

Our team carefully inspects every duck and removes any remaining fine feathers by hand, ensuring smooth skin.

4. Glaze Coating

A specially formulated glaze is evenly brushed onto the skin to enhance colour development and crispness during roasting.

5. Controlled Air-Drying (Minimum 48 Hours)

The duck is air-dried in a temperature-controlled environment for at least 48 hours. This crucial step tightens the skin and prepares it for roasting.

6. Final Quality Check & Cold Packing

After drying, each duck is inspected once more before being sealed and frozen to maintain optimal condition.



📌 Defrosting Guidelines

• Approx. 2–2.3kg marinated whole duck

• Delivered frozen

Recommended Method (Refrigerator Defrosting)

Place the duck (keep it in its packaging) in the fridge at 0–4°C, breast side facing up.

Allow 24–48 hours for complete defrosting before roasting.

Gradual defrosting helps maintain moisture, texture and flavour.

Important Food Safety Advice

• Once defrosted using any rapid method, cook the duck immediately.

• Do not defrost using warm or hot water, as this may cause uneven temperature and increase bacterial risk.

Fresh Garnish Notice

To maintain product quality during freezing and transport, cucumber and spring onion are no longer included.

For best results, we recommend preparing fresh garnishes at home before serving.


😋😋 Cooking Instructions🍽️🍽️

Step 1: Roasting

Preheat oven to Fan 140°C.

Place the defrosted duck directly on the oven rack, breast side up (bamboo skewer side facing up).

Put a tray underneath to catch the dripping fat.

Roast for 90 minutes (45 minutes each side).

Once finished, turn off the oven and leave the duck inside with the door slightly open for 20 minutes to rest.

🔥🔥Again, heat oven to Fan 180-200°C.

Roast for 20 minutes (10 minutes each side).

Step 2: Pancake Preparation

Using a Steamer (Recommended)

Line the steamer with greaseproof paper/ Baking Paper

Steam one pack (10 pancakes) at a time.

Place over boiling water and steam for 3–5 minutes.

Without a Steamer

Lightly spray water over the pancakes, cover, and microwave at 800W for 1 minute.

Step 3: Serving

Remove the duck from the oven.

Take out the bamboo skewer and carefully drain any juices inside the cavity.

Slice the crispy skin from the breast and serve with osmanthus sugar.

Slice the duck meat and serve with sauce.

Wrap duck meat, sauce, spring onion and cucumber in a warm pancake and enjoy.
